Crunchy cookies with the flavour of peanuts in it.

Peanut butter 1/2 cup

Roasted peanuts, crushed 2 tablespoons

Refined flour (maida) 3/4 cup + 1 tablespoon

Cinnamon powder 1/2 teaspoon

Soda bicarbonate 1/4 teaspoon

Rolled (porridge) oats 1/2 cup

Castor sugar (caster sugar) 3/4 cup + 1 tablespoon

Golden syrup 1 tablespoon

Desiccated coconut 1/4 cup + 1 tablespoon

Lemon rind , grated 1 teaspoon

Place the refined flour in a bowl. Add cinnamon powder, soda bicarbonate and mix. Add peanut butter, crushed roasted peanuts and oats and mix. Add caster sugar, golden syrup and desiccated coconut and mix. Add grated lemon rind and a little water and mix into a soft dough. Wrap the dough in cling film and refrigerate for half an hour. Preheat the oven to 180°C/350°F. Take the dough out of the refrigerator and divide into small marble sized portions and shape into balls. Flatten each ball and place them a silicon baking sheet. Keep this sheet on a baking tray and bake in the preheated oven for fifteen minutes or until light golden brown. Remove from the oven and transfer the cookies to a wire rack to cool. Store in an airtight tin.
