- 2 cups all-purpose flour
2 (1/4-ounce) packages active dry yeast or 5 teaspoons
2 cups water
1/4 cup vegetable oil
1 tablespoon granulated sugar
2 teaspoons salt

- Method
- Preheat oven to 400°F (205°C) and grease 2 baking sheets.
- Stir together flour and yeast.
- In a saucepan heat water, oil, sugar, and salt until warm (about 120°F to 130°F/ 50°C to 55°C). Add the liquid to the flour mixture and beat until smooth, about 3 minutes.
- Add the rest of the flour to make a soft dough. Turn out onto a floured surface and knead until smooth, about 10 minutes. Cover, and let rest for 30 minutes.
- Roll into a log and cut into about 16 pieces, roll each piece into a 5-inch circle. Place on baking sheets and let rise in a warm place about 30 to 45 minutes.
- Bake 10 to 12 minutes. Remove from baking sheet to cool.
- Store in plastic bag until ready to fill with your favorites.
Makes 16 pita pockets.
