1/2 chicken breast, boneless & skinless
Basic pizza dough (see recipe below)
1/3 cup blue cheese dressing
1/4 cup red hot sauce
Onions
Mushrooms
1 1/2 to 2 cups shredded mozzarella
freshly ground pepper
1 to 2 stalks celery, thinly sliced
METHOD:
Preheat the oven to 425 degrees Fahrenheit. Cut the chicken into bite-sized pieces and cook in a frying pan over medium heat until just cooked. I usually add lots of freshly ground black pepper while I'm cooking it. Set chicken aside and roll out the dough onto a well-floured surface or flatten into a greased pizza pan. Now I usually just pour my red hot & my blue cheese dressing directly on the dough and spread them so they only partially mix but if you prefer a more even, milder taste then it's best to mix the two until well combined before spreading it on the dough. Then evenly distribute the chicken, onions & mushrooms over the pizza. Then top with the mozzarella and sprinkle with freshly ground pepper. Bake in the oven for 10 to 15 minutes or until the crust is browned just under its edges and the cheese is bubbly. Sprinkle with the celery immediately and let stand 5 to 10 minutes before cutting and serving.
